Holiday treats 2020

Home means something special this time of year, and homemade treats are one of our favorite holiday traditions. I love to bake. There is nothing like the smell of something warm and wonderful emerging from the kitchen.

 
I have attached a link to the first of our most loved 2020 cookie recipes for you to try! They do freeze well if you want to get a jump on your baking early.

Pecan Balls ~ Butter Balls~

 

I have made many recipes for this type of cookie. They are also called “snowballs, butter balls, Mexican wedding cookies” etc. They have always come out dense and uninspiring. My Mother- in- law’s version was so much better. I later realized her trick…she used cake flour instead of all purpose flour.

 

Forget every other recipe you find for this cookie.

 THESE are the best! Very light and tasty!

 

Bake at 350 degrees for 15-20 minutes space them 1” apart

 

1 Cup butter

2 1/3 Cups CAKE FLOUR

1 cup very finely chopped pecans

½ cup sifted powdered sugar

¼ teaspoon salt

1 teaspoon vanilla

 

Cream the butter and sugar. Add nuts. Sift flour, then measure. Add salt to flour and mix with batter. Add vanilla.

Chill dough 1 hour

Roll into balls about the size of a small walnut, space 1” apart on ungreased cookie sheet or parchment lined sheet.  Bake at 350 15-20 minutes. Do not overbake. Cool.

They can be stored at this point, plain. (frozen or refrigerated in tins)

If using right away, roll baked cookies in powdered sugar. Then, roll in additional powdered sugar just before serving.
